Holiday Trail Mix for Travelers

November 23, 2009

It’s off to Grandmother’s house we go . . . but that trip may be long, and finding nutritious food around the Holidays may be tough, especially if you are traveling on Thanksgiving Day, Christmas Eve or Christmas Day.

So we thought maybe you would appreciate this suggestion: create sandwich bags with trail mix for each person traveling with you.

Here is the recipe that I like best for Holiday travel.  You can double or triple the recipe, depending on how much you will need.

Ani’s Holiday Trail Mix

Ingredients

1 – 8 oz box pitted dates
1 c. cashews
1 c. golden raisins
1 c. dried banana chips
1 c. dried apricots
1/2 c. sunflower seed nuts
1 c. dried cherries
Confectioner’s sugar

Method

Put about 1/2 cup confectioner’s sugar in large ziplock bag.  Place dates in bag and shake to cover with the sugar.  Place sugar covered dates in bowl and combine the remaining ingredients.  Divide and place in ziplock bags.

Makes 6 (1 -cup) servings.

TIP: I find great prices on dried fruit at ALDI.

Let me know what you think, Alia. I am sure you could substitute items, such as almonds for the cashews. I also am planning on adding some dried pineapple and seeing how that works. I think it would be good!
